Chicken and Chorizo Bake

I love this recipe because it’s so easy; just throw it all in a casserole dish and bake! It’s very flavorful, with just the right amount of richness from the chorizo which is balanced out by the acidity of the olives and lemon. If you’re in a rush, this is a great meal to try out. Serves: 4 servings
 
Ingredients
  • 4 pieces chicken (I used four chicken breasts, but I'd like to try it with drumsticks)
  • 1 can of white beans, drained
  • 1 lemon, sliced
  • ⅓ cup black olives
  • 2 chorizo sausages, sliced (I used ground chorizo, sliced it as best I could, and scattered it around the casserole dish)
  • 4 cloves garlic, bashed a bit but still in their skins
  • 1 cup chicken stock
  • A little less then ½ teaspoon pimentón de la vera (optional; I haven't used it)
  • Olive oil
  • Sea salt and freshly cracked black pepper (regular salt and pepper are fine for this)
Instructions
  1. Place the beans on a baking dish, then pour the stock over them.
  2. Arrange the chicken pieces, lemon, olives, chorizo, and garlic over the beans. Drizzle olive oil over the whole lot. Sprinkle with salt, pepper, and pimentón.
  3. Roast in a 400F oven for 35 minutes or until chicken is cooked through. Serves 2 (if you can stuff more chicken pieces into your casserole dish, you can add up to 6 pieces of chicken so it can serve more people)
