These were a huge hit! Keith, Andrew, and Kramer all ate at least two of these the other night. I brought some into work, too, and they quickly disappeared. They seriously tasted just like a s’more, and they should, considering that all of the same ingredients are used, just kicked up a notch! The crust is a graham cracker cookie, topped with marshmallow, a layer of chocolate, and a graham cracker crust to top it all off. These bars are sure to wow everyone that tries them! They couldn’t be easier to make, either. I doubled the recipe for a 9×13 pan, and made Graham Cracker Snickerdoodles with the leftover dough! Printable recipe for the S’mores Bars after the jump.
What you’ll need.
Pulse about 8 graham crackers in a blender or food processor to get your graham cracker crumbs.
Mix together the flour, baking powder, salt, and graham cracker crumbs.
Cream together the butter and sugars, until light and fluffy (at least 3-5 minutes), then beat in the egg and vanilla.
Gradually mix the flour mixture into the butter mixture.
Press half of the dough down into the greased and/or lined 8×8 pan (I doubled it and did a 9×13).
Lay the chocolate bars over the dough.
Then spread the Fluff over the chocolate.
Press the remaining into sheet with your palms and lay the sheets over the marshmallow (as shown). Don’t worry if everything isn’t completely covered; it doesn’t need to be! The dough will rise, so don’t worry if it looks thin on the bottom or the top.
Enjoy!
- ½ cup unsalted butter, room temperature
- ¼ cup brown sugar
- ½ cup granulated sugar
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1⅓ cups all-purpose flour
- ¾ cup graham cracker crumbs (about 8 graham crackers)
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 2 king-sized milk chocolate bars
- 1½ cups marshmallow Fluff (not melted marshmallows because they harden when they cool)
- Preheat oven to 350 degrees F. Grease and/or line an 8-inch square baking pan.
- In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla.
- In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Don't worry if it seems thin; the baking powder will allow it to rise.
- Place chocolate bars over dough (don't layer the bars, just break them to fit if you need to), then spread the marshmallow Fluff over the chocolate bars. Finally, top the Fluff with the remaining dough by forming the dough into sheets with the palm of your hands and laying it down (as shown above). Don't worry if the dough isn't covering everything! It'll spread out as it bakes.
- Bake for 30 to 35 minutes, until lightly browned. If the top is browning too quickly, you can always cover it with tin foil for the remaining baking time. Cool completely before cutting into bars. If you don't allow them to cool completely, they will crumble when you try to cut them. Makes 16-20 bars.

Regular marshmallows don’t have enough moisture to stand up to the heat of the oven, I think. I know that Baking Bites (where the original recipe is from) cautioned against using melted marshmallows as a replacement. If you live in the US, you’ll definitely be able to get marshmallow fluff! I have no idea how much our butter is in terms of grams and I’m afraid to convert it myself or through some conversion thing because I don’t want to give you the wrong amount! I think that 2 cups of butter = 1 pound, though.

Okay, now I’ve found the perfect cookies to send to my “friend” stationed in Kuwait. Anybody know the best way to store cookies like this for shipping? I don’t expect them to be that great by the time they get there, but they look so good to start with, and I do think the thought counts a lot! These are amazing, and mine turned out pretty good, but they’re softer. Any tips how to get them more crunchy cookie like? I would like them a lot more if it was more like a true s’more, with a bit of a crunch to the dough.

I just made these, and they smell fan-tas-tic. I had a little trouble spreading the dough part, so what I ended up doing was putting the ball of dough I was going to use on some wax paper and spreading it out to the square shape of the pan. It peeled off the wax perfectly and was sooo much easier than trying to do it in the pan with my fingers! Great recipe :]
Becky: Yes, the dough is a bit difficult to spread out, but I always just get in there with my hands. The wax paper is a great idea!
These look delicious! What would be the problem of using mini marshmallows instead of the marshmallow fluff?
Clarie and Polina: Using regular marshmallows is a bad idea, trust me. When marshmallows cool after they’ve been melted, they turn rock solid, whereas the fluff says nice and gooey. This means that if you want to serve these to people as a dessert or for an occasion/event, they’ll break their teeth if you use regular marshmallows!
Why can’t we use melted marshmallows?

Emma: I’m sorry fluff is so expensive there! It has to be fluff though, not marshmallows, because marshmallows get hard when they cool. I’m not quite sure what the UK equivalent to them are; they’re honey flavored cookies more so than “crackers”, if that helps.
I made these last week, but we don’t have access to Marshmallow fluff where I live in so I tried them out with melted marshmallows. They did get very solid once they cooled but I think the secret is to not use too much so that the layer isn’t that thick. My brother and my mom absolutely loved them! Awesome recipe.

For the people that don’t want to shell out the money for name brand Fluff…
IF you have a mixer (almost impossible to make by hand with a whisk) there’s a super easy recipe for a Fluff clone:
1 cup Powdered Icing Sugar (granulated won’t give a nice texture)
1 cup Corn Syrup
2 egg whites
2 tsp Vanilla Extract
Pinch of Salt
Put ingredients in mixer at med-high speed for 10-15 min, check consistency after 10 min and continue to mix if it is not thick enough.

I saved this recipe from your blog, and have made it a few times. It is so awesome, and all my friends LOVE it!
However, if I recall correctly, the pictures were different in the original post, and you did mention that you made 1 1/2 recipes of the crust (using 2 eggs), using a 7 oz. jar of marshmallow crème, and a 6-pack (1.55 oz. each) of Hershey’s chocolate bars for a 9×13 pan (because that’s what I do, and it works out great).
Is it actually better to double the recipe (not for the hips, LOL, but proportion-wise) for a 9×13 pan?

@Thomas and @Becky: I wouldn’t use marshmallows, as they do not have the same texture as Fluff. A few readers have talked about recipes for Fluff in the comments, but I haven’t tried them out so I can’t speak for them. I would maybe look on Amazon if you’re really curious about it – it’s a fun treat and goes great with bananas, chocolate, and peanut butter!

Liza: No, it’s not okay, unfortunately, because the dough will not rise and you will be left with some flat, tough cookies. You can get baking powder at any grocery store or bodega!

oh yum, I tried these and they were out of this world! I made mine in a 9×9 round pie dish and I had lots of the graham dough left over, I should have made the bottom and top layers both a bit thinner as well in hindsight. Next time I will, I’ll certainly be making these again.

Happy New Year Sidney! I made these yesterday and they are incredible! I did substitute Trader Joe’s dark Swiss chocolate bars with whole hazelnuts for the milk chocolate bars and oh my goodness! Crunching on a hazelnut and the chocolate and the marshmallow and the graham cracker crusts was just so much heaven–the recipe “welcomed” us to 2011 like nothing else!

I usually place my eggs in a bowl of very warm to hot water for about 5 minutes if I forget to leave them out for a while. It works just the same, but it’s much faster.

Some may call me passionate about s’mores, but I was sad because I felt like any recipe that tried to be “s’more-like” just didn’t create the great umph that is within a s’more itself. Unfortunately, marshmallow fluff requires corn syrup. Here in France (and many other places, I would wager), that also requires a trip to a specialty American-import store, either in person or on-line.
I just made these! OMG! So delicious! The good thing is you really can’t eat more than one at a time because they’re so rich. I am bringing some to work tomorrow to see what everyone thinks, but I think they’re wonderful!

I had really wanted to cookout over the weekend, but with our ongoing rain, it wasn’t in the cards! I ended up “grilling” burgers inside with some oven baked fries, finished off with these! These are so goooooood! I made a couple changes though… I made mine in a cupcake pan (because I thought it would be easier for my kids to handle) and I used dark chocolate in half and reeses peanut butter cups in the other half (my son is allergic to peanuts). I found your recipe on Pinterest and my 4 year old and I made them this morning to take to a football tailgate party. They are still in the oven, so I haven’t tried them yet…but just the fun of making them with my 4 year old was worth it! She LOVED smushing the dough and arranging the chocolate bars. Such a kid friendly recipe! Thanks!

Saw this recipe, and had to try it. Sadly for me, I live in the UK and marshmallow fluff is not readily available here. Like other Americans who want to make these recipes we have to adapt sometimes and a trip to Edinburgh just to buy marshmallow fluff didn’t seem realistic to me. Sooooo, here is what I did instead. I took 1/4 of a package of Campfire Marshmallows, (you can get these at Costco, and I ALWAYS have these in my cupboard) with 1/4 cup of butter, melted it over low heat, as you would for Rice Krispie Treats, allowed it to cool slightly before pouring this over the chocolate. Personally to anyone who wants to try it this way, make sure you complete all other steps first before you start melting the marshmallows. I think it turned out quite well actually. However, to those who don’t have the American marshmallows, and have to purchase the ones from the supermarket, do not, under any circumstances, use the pink marshmallows!

I just made these last night for a party this evening and ran into one small problem…
I let them cool completely, as instructed, but let them cool overnight as well. While cutting them was totally easy, the chocolate inside has now hardened to be more like a bar, rather than the gooey-ness that is pictured.
Any suggestions for warming/reheating in order to make everything slightly melty again? They’re already cut but still in the pan so I could put them in the oven @ 200 for a bit, though I wouldnt’ want to overcook anything. Also, I could put them on a plate and nuke them for 30 seconds, but microwaves are always concerning when you’re going for small changes…
Just throw ’em back in the oven at 350 degrees F for 5 minutes or so if you want them to be gooey – I just say to cool them completely for serving/transportation purposes so that you don’t get a mess all over the place.

This recipe is AMAZING!!! It really tastes like smores. One thing I’ve found is that though Hershey’s chocolate is not my favorite, using it in this recipe makes the desert taste more authentic (I guess growing up we ALWAYS used Hershey chocolate for smores). Anyhow, I’ve made these several times and they always disappear VERY fast

The first time I saw these, I knew I had to try them. I figured I’d save them for a special occasion.. well, Father’s Day was the occasion and I have to say, NO ONE was disappointed, least of all the man-of-honor!! It was easy to make, I did a 9X13, and even though I didn’t have vanilla extract, and chose not to use the granulated sugar or replace it (I kinda thought they would be sweet enough without it), they were AMAZING! I even had a bar for brunch today, WITH watermelon and a yogurt for balance, lol! Thanks for the inspiration guys! Keep it up!

Just made these and they are awesome! Once cooled and sliced, they look just like the pics. I did a double batch in a 9×13 and used 2-7oz jars of fluff, which is probably a bit more than the recipe called for but seemed like a good amount. Also used semi-sweet instead of milk chocolate. So good! Thank you for another brilliant recipe!
