This is a great sandwich with which to remember this past summer. The sun is out today in New York, but the weather is a bit chilly and it’s a harsh reminder that summer is definitely over. However, as this recipe uses unripe mango, for a slightly tart, crunchy bite in contrast with the salmon and avocado, you don’t need any seasonal summer ingredients to make it! The smoked salmon and avocado are a natural pairing, I think, and I love the combination of sweet and salty, which is exactly what the mango and salmon bring to the table. The basil is a lovely neutral herb in comparison to the rest of the ingredients, so it adds a bit of an earthy flavor without overwhelming your taste buds. Kramer and I had this sandwich for lunch one day on a lazy Sunday afternoon, and I couldn’t have been happier with it, especially because it requires no cooking at all! Just throw everything on some bread an call it a day – and isn’t a simple sandwich sometimes the best sandwich?

Your simple ingredients.
Julienne your mango and toss with lime and salt.
Peel and slice your avocado.
Place a few slices of avocado on one piece of bread.
Lightly mash your avocado with a fork, then drizzle with olive oil and sprinkle with pepper.
Top with the mango, salmon, and basil.
Top with the other slice of bread, slice in half and serve.
- 1 small, unripe mango, peeled and julienned (cut into thin, matchstick-like strips)
- juice of ½ a lime
- kosher salt, to taste
- 8 thin slices of bread (I used a multi-grain bread)
- 1 ripe avocado, halved, pitted, peeled, and sliced
- extra-virgin olive oil
- freshly ground black pepper
- 8 ounces smoked salmon, thinly sliced
- 12-16 fresh basil leaves, washed and dried
- Start by preparing your mango. I find that the easiest way to julienne a mango is to peel it with a vegetable peeler, then cut it like you would an apple. Slice it into thin, matchstick-like strips, then place it in a bowl and toss with the juice of ½ a lime and season with a pinch of kosher salt. Taste, adjust the amount of salt or lime juice as you see fit, and set aside. I had lots of extra mango, so I put it in a plastic bag and snacked on it over the next few days - the lime helps to preserve it, so it will keep for a while.
- Lightly toast your bread in the oven or a toaster, then place the avocado on 4 slices of bread and gently mash and spread it with a fork. Drizzle with a tiny bit of olive oil, then season with some freshly cracked pepper. Top the avocado with the mango, then the smoked salmon, and finally, the basil, evenly amount all 4 pieces of bread. Top with the other 4 slices, cut into halves, and serve.
I think this is my favorite sandwich yet! You had me at smoked salmon.

The best sandwich I’ve ever had (until I pick up this cookbook and try EVERY SINGLE ONE) is a pulled pork sandwich from Reading Terminal Market in Philadelphia. My friends and I have driven there, from LI, just for this sandwich.
My parents are OBSESSED with Reading Terminal Market! My dad is in Philly a ton for business, and they always text me pictures of the food they are eating when they’re there. My dad said his favorite lasagna in the world is from there. I need to make the trip again – it’s the first place I ever tried scrapple, haha!
I’m not a seafood fan, but I bet this sandwich would work well with sliced pork roast or straightforward ham. Fruit and pork play well together.
They absolutely do, but if you like pork, give smoked salmon another go! It’s salty and smokey and soooo good – a great way to start your seafood adventures!

This is my favourite. I’m going to make this for lunch tomorrow. A good sandwich story hmm, well when I was five I was walking on the beach with my mom and a seagull swooped down and snatched my peanut butter and jelly sandwich right out of my hand. I lost it. It’s on video and everything.

When I was growing up, I always wanted a BLT after I had been sick. It was a sure sign I was getting well. It sounds like I was sick a lot, but not really. I just equated a BLT as about the best thing possible and loved them. Still do!! I can’t wait to make the meatloaf! The salmon sandwich will become a regular I can assure you!

My favourite childhood memory in the Caribbean … all day at the beach with our Daddy, Mum and my 3 siblings…as we head home we visit a neighborhood bakery…fresh baked bread, thick English style butter, huge chunks of cheddar cheese…salt on our lips from the sea water, tired and happy…perfect!
English butter, oh man – Kramer and I freak out whenever we get some European butter on our hands!

Mmm… I just made this sandwich. My husband and I had two apiece. I would never have imagined some of these flavors together–mango with smoked salmon? But WOW! I’m crazy about this. On hubby’s second sandwich, he spread a wedge of laughing cow french onion cheese on the top slice–in his opinion, it made the sandwich even better. I liked it, but would prefer the plain cheese if I went that route.
