No Bake Peanut Butter Oatmeal Balls
Serves: 25-30 meatballs
  • 2 cups rolled old-fashioned oats
  • ¾ cup white sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon water
  • ½ teaspoon vanilla extract
  • ½ cup butter, softened
  • 3-4 tablespoons peanut butter (I used crunchy, but creamy is also fine)
  • 1 cup powdered sugar
  1. In a large bowl, combine the oats, sugar and cocoa. With clean hands, mix in the water, vanilla, butter and peanut butter to form a dough.
  2. Wash your hands, then roll the dough into balls 1 to 2 inches in diameter. Roll the balls in powdered sugar until thickly coated.
  3. Chill on a baking sheet in the fridge for at least 30 minutes before serving.
