Banana Daiquiri Bread

Banana bread with a tropical twist.
Serves: 12 slices
  • 1¼ cup raw sugar
  • ¼ cup unsalted butter, melted
  • ½ cup 2% milk
  • 2 eggs
  • 1 tablespoon cointreau
  • 3 tablespoons spiced dark rum
  • 2 cups mashed bananas (about 4 bananas)
  • 2¼ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  1. Preheat your oven to 350 degrees F. Grease and line a 9x5x3 loaf pan.
  2. In a large bowl, cream together sugar and butter. Add in the milk, eggs, liquors and bananas. Combine dry ingredients in another bowl and gradually add into butter mixture. Combine just until moistened; do not overbeat. Pour the batter into the loaf pan and bake for at least 1 hour or so, until a toothpick inserted comes out clean and the top is a light golden brown. Cool 25-30 minutes in the pan before slicing and serving.
