Cherry Cheesecake Paletas

Tart cherries, cream cheese and graham crackers some together for a refreshing summer take on the classic New York treat.
Serves: 10 popsicles
  • 2 cups frozen tart cherries (not thawed)
  • 1 cup milk
  • 4 ounces cream cheese
  • 1⁄2 cup powdered sugar
  • 1⁄4 cup crushed graham crackers
  1. In a blender or food processor, blend together the cherries, milk, cream cheese and powdered sugar until smooth. Pour into your popsicle molds, sprinkle with the crushed graham crackers, add in the popsicle sticks and freeze for at least 8 hours.
  2. Remove the paletas from the freezer and wiggle them out of their molds. I find that running the molds under a bit of hot water for a second or two will help release them. Sprinkle with some additional crushed graham cracker before serving, if desired.
